Light salmon colour and a very fine persistent bubble, the nose shows plenty of fresh red fruit. In the mouth it reveals freshness supported by the vibrant acidity, and balanced by the creaminess of the mousse.
In the sparkling wine Vadio rosé we try to explore the versatility of the berry. We select a parcel of a small farmer with a vine about 30 years old, where the vigor of the berry does not allow very high maturation and the acidity is dominant.
Pressing of whole bunches and with very soft extractions, followed by fermentation between stainless steel and used barrels. In February it is blended and we do the tirage. After the second fermentation is finished, the minimum lees contact is 18 months before the dégorgement.

Vadio Bairrada Doc
VADIO is situated in the village of Poutena in the region of BAIRRADA. It is a small and family project founded in 2005 by winemaker Luís Patrão, whose essential element is the recovery of traditional grape varieties and the production of authentic DOC BAIRRADA wines. We have three totally distinct small vineyards and an old warehouse which we have adapted in a very simple way for the production of wine. Our wines present a classic style that intends to respect the authenticity of the region and the character of the grape varieties that give it origin.
