Rocim
A sparkling wine that takes advantage of the unique microclimate of Vidigueira! Produced from Touriga Nacional, harvested earlier, it underwent disgorgement after a 12-month aging on its lees. A beautiful salmon color, with fine and persistent bubbles.
Climate: Typically Mediterranean, in the wine sub-region of Vidigueira, where the climatic conditions are the mildest in Alentejo, providing an optimal microclimate for the production of high-quality wines.
Soils: Unproductive, of granitic and schist origin. Great pedological potential for vine cultivation and for obtaining excellent wines. Touriga Nacionalis planted in a plot with an eastern exposure and is managed in the multi-spacial training system, LYS. The orientation of the rows is East-West.
Vinification: Alcoholic and malolactic fermentation of the base wine in stainless steel tanks. Second alcoholic fermentation at controlled temperatures.
Aging: Disgorgement after a 12-month aging on its lees.
