It is a full-bodied red wine with a 'freixenista' character of the Upper Douro. Aroma of black fruits, with notes of liquorice, spices, violets, bergamot and rock-rose, in balance with very elegant notes of barrel aging.
Very complex and elegant, very mature, with fine, firm but smooth tannins, making this wine long and full with a fruity flavour, anticipating an excellent potential for ageing in bottle.
The harvest starts in the first days of August to find grapes with high acidity and low sugar. Manual harvest, the grapes are crushed directly into the pneumatic press, in a reductive environment and controlled temperature. The first fermentation takes place with ageing on fine lees and “bâtomage”. After the second fermentation in bottle through the classic method, the wine ages for about 12 months in the cellar of Quinta dos Castelares at a constant temperature of 15º and humidity of 75%. Manual “Remouage” followed by “degorgement glacée” final refining in bottle.
