The harvest starts in the first days of August to find grapes with high acidity and low sugar. Manual harvest, the grapes are crushed directly into the pneumatic press, in a reductive environment and controlled temperature. The first fermentation takes place with fine lees ageing and “bâtomage. “After the second fermentation in bottle through the classic method, the wine ages for about 12 months in the cellar of Quinta dos Castelares at a constant temperature of 15º and humidity of 75%. Manual “Remouage” followed by “degorgement glacée” final refining in bottle.
