Salmon in color, with an aroma of wild berries, lingering flavor and complexity, this sparkling wine is ideal as an aperitif and to accompany a wide variety of cuisines.
VINIFICATION
For the vinification of this Rosé Dona Paterna, the grapes of the Vinhão, Brancelho and Pedral varieties are carefully selected in the vineyards, with open-mouth vinification and controlled fermentation at 16/18°C. The high quality must obtained is fermented at a controlled temperature in order to obtain a correct base. Once stabilized and filtered, it is bottled for the second fermentation according to the classic method. The ideal cellar conditions (4.5 meters below ground level) keep temperatures low and constant for ideal fermentation for several months. It is only then that we proceed to the “disgorging” to eliminate the yeasts and to the final bottling.

Dona Paterna
Located in one of the most important sub-regions of the Vinho Verde Demarcated Region, the sub-region of Monção and Melgaço, the Dona Paterna winery is specifically located in the northernmost municipality of Portugal, Melgaço, at Quinta da Carvalheira, in the centre of the parish of Paderne, a region strongly marked by the cultivation of vines, namely the alvarinho variety, one of the most illustrious white grape varieties and considered by many to be the best white grafted in Portuguese vineyards.
