With a lemon yellow color, a fine and persistent bubble, the aroma shows the fruit of the Alvarinho variety with persistent flavor and complexity. Ideal as an aperitif, due to its characteristics it serves to accompany a wide range of cuisines.
The vinification of Dona Paterna Brut sparkling wine uses carefully selected Alvarinho grapes from vineyards with a lower sugar concentration and fresh acidity. The resulting high quality wort is fermented at a controlled temperature to achieve the correct base. After stabilization and filtration, it is bottled for a second fermentation according to the Classic Method. The ideal conditions in the cellar (4.5 meters below ground level) maintain low and constant temperatures for an ideal fermentation over several months, thus maintaining the characteristics of the Alvarinho variety. It is only then that the “disgorging” proceeds to the elimination of the yeasts and the final bottling.

Located in one of the most important sub-regions of the Vinho Verde Demarcated Region, the sub-region of Monção and Melgaço, the Dona Paterna winery is specifically located in the northernmost municipality of Portugal, Melgaço, at Quinta da Carvalheira, in the centre of the parish of Paderne, a region strongly marked by the cultivation of vines, namely the alvarinho variety, one of the most illustrious white grape varieties and considered by many to be the best white grafted in Portuguese vineyards.
