Conceito
Douro-grown grapes, but with the Austrian variety Grüner Veltliner, led this white wine to step outside the denomination and carry the IVV seal. First produced in the 2012 harvest, it is fermented in used French oak barrels and then undergoes secondary fermentation to become a sparkling wine, aging in the bottle for many months in a cold cellar with a constant temperature. This is a rich sparkling wine, full of brioche and pain grillé nuances, complemented by the exciting spiciness of the variety. Fine and firm bubbles, with generous sweetness balanced by extreme dryness, enhancing the grape’s unique character.
The grapes are chilled and then gently pressed in a pneumatic press. Cold settling is followed by fermentation in barrels with controlled temperature and regular bâtonnage until one month before bottling. The second fermentation takes place in the bottle using the traditional method.
Aging: 8 months in used French oak barrels with regular bâtonnage. After the second fermentation, the bottles aged in a cold and constant-temperature environment for 24 months.
