Open citrus in colour, it has a fine, persistent bubble. It's a serious sparkling wine, with aromatic notes very similar to its Champagne cousin.
The nose is fresh and complex with notes of citrus fruit, apricot and apple. Shaking the glass soon reveals its more serious side with nuances of hazelnut, yoghurt, brioche and some spices.
On the palate, it's fresh, with good acidity and a long, spicy finish. It's a top Bairradino sparkling wine, or as winemaker Sérgio Silva would say, an "exceptional Blancs des Blancs".
Winter 2016/2017 in Bairrada was very dry. There was some rain in spring, in late April and early May, but the summer was very dry again. The low humidity levels meant that the incidence of disease was practically zero and there was no need to treat the vines. Due to the extreme drought, the grapes ripened very early and with the intense heat, the harvest was brought forward by around 3 weeks compared to the previous year, starting on 17 August and ending on 19 September.
Vinified according to the traditional method, the second fermentation took place in the bottle with free yeasts, and it aged on fine lees in the Quinta de Baixo cellar for 48 months. Dégorgement took place in October 2022.
