Straw-yellow color, bright, attractive, with an easy-to-identify fine and persistent bubble. Rich aromas, showcasing all the delicate nobility of a Blanc des Blancs, with floral notes, white fruit, and some dried fruits, all evolving nicely. Delicate palate, fresh in its acidity, good integration of the mousse with the fruit, finishing in an elegant and prolonged manner.
Vinification: Gentle pressing, cold settling, alcoholic fermentation at 14-15ºC for 15 days. After this, it underwent batonnage on fine lees for 4 months. It was then inoculated and fermented in the bottle, following the classic sparkling wine method. Bottle aging on lees for 18 months.
Perfect as an aperitif or paired with natural seafood, sushi, or salads.
