Titular
Made from Touriga Nacionaland Tinta Roriz subjected to light pressing, sufficient to obtain a light and attractive color. The aim of this wine is to achieve a balance between the richness and complexity of the grape variety and the lightness and joy that only a rosé with few tannins allows to achieve.
Vineyards: Vineyards located in the Terras de Senhorim sub-region, between the Dão and Mondego rivers, planted between 400m and 500m in granite soils, with an average age of 36 years.
Vinification: The selected red grapes for this rosé were initially quickly pressed at low pressures in a pneumatic press, to avoid excessive color extraction. The resulting must was then sent to a settling tank, where it was subjected to a temperature decrease to prevent fermentation for about 36 hours, after which selected yeasts were added and fermentation proceeded at controlled temperatures between 15 and 17 degrees Celsius.
Pairs very well with fish, pasta dishes, sushi, salads, and white meats.
