Textura da Estrela
Textura da Estrela Rosé is made in 2019 from 50% Touriga Nacionaland 50% Tinta Roriz from its own plot in Dão, sub-region of Serra da Estrela, in Vila Nova de Tazem. These 28-year-old vines grow on granitic soils, are treated sustainably, without herbicides and have been in conversion to organic certification since 2020.
The grapes were harvested by hand in mid-September, in a year with a warm winter, but a dry and cool spring that ensured good monitoring and facilitated work in the vineyard. The summer of 2019 was marked by cool nights and hot days, resulting in slow ripening and very expressive grapes in acidity.
After destemming and pressing, the teardrop must is statically decanted for 48 hours. Fermentation takes place in 225 litre French oak barrels with indigenous yeasts where the wine is aged for 11 months “sur lie” without batonnage followed by a further 8 months in stainless steel. Naturally stabilised, may show cloudiness or deposit.
