Manual harvesting for 22 kg boxes. Pre-fermentation bleeding of the red must vats until the desired delicate colour is obtained. Cold static decanting for 48 hours. Fermentation in temperature-controlled stainless steel vats. Ageing for 5 months in stainless steel vats.
