Herdade das Servas
Viticulture: Vines planted in poor soils, benefiting from a Mediterranean climate with high temperature variations and hot, dry summers. After necessary green interventions during the vegetative cycle, the grapes were manually harvested and transported to the winery in crates.
Vinification: Grapes are pressed in a pneumatic press with oxidation protection. Static decantation for 48 hours. Alcoholic fermentation of part of the must in third-year French oak barrels and the remaining part in stainless steel tanks with temperature control.
Aging: Once alcoholic fermentation is complete, the wine ages on lees in stainless steel tanks and oak barrels with batonnage for three months.
Longevity: Between 3 and 10 years, if stored in a cool, dark place with the bottle laid down.
Pairs with: Salads, pastas, pizzas, sushi, and white meats.
