Vineyard: Located 119 km from the Atlantic coast, at an altitude of 550 m, 8 years old / yield of 4 tons per hectare, NW – SE orientation; single cordon training system. The climate is very hot in summer and windy with snow in winter.
Harvest – 100% hand-picked during the last week of August.
Vinification – Grapes go directly to the press after destemming without crushing. 24 hours of cold settling; 100% fermentation in stainless steel tanks at controlled temperature.
Ideal served at 12°C with appetizers, soft cheeses, seafood, fish dishes, pasta, and pizzas.
