Xisto
In the Douro Valley, where numerous grape varieties are planted on terraces, slopes, and flatter areas, schist is the common factor. This was the starting point for Xisto Ilimitado, an exploration aiming to express the diverse zones with unique character, regardless of the varieties planted there. In the Cotas and Ervedosa do Douro areas, we use vineyards aged between 25 and 65 years, planted on wide terraces and slopes above 400 meters.
Over the years that Luís Seabra worked in the Douro region, he developed a deep knowledge of a selection of old vineyards with a unique character shaped by their location and grape varieties.
The grapes come from two Cima Corgo vineyards, one in Covas do Douro and the other in Ervedosa do Douro, both over 80 years old. The first vineyard is planted at 400 meters facing west, and the second at 570 meters facing north. Both vineyards were harvested separately, with the grapes vinified in open wood vats made from old Port wine barrels, each with 60% whole clusters. The total maceration time was 29 days, and after pressing, the wine was aged in 350-liter and 228-liter barrels for the Ervedosa wine. Malolactic fermentation occurred in barrel, in contact with the lees until August, and the total aging period was 18 months.
This wine pairs well with complex dishes with reductions and meat jus, dishes with truffles and mushrooms, lamb, goat, or grilled aged meats.
