World Wild Wine
The Definidos range was created with the goal of revealing the immense potential of the Dão region. These wines are delicate, precise, and authentic, designed for demanding consumers who value originality and character. With great bottle-aging potential, they stand out for their minerality and freshness in the white, and for fresh fruit, forest aromas, and spices in the red.
The Definidos are, in part, the “younger siblings” of the Vinhos Imperfeitos.
The grapes that compose this wine come from different sub-regions of the Dão, where the age of the vines ranges from 100 to 120 years. The majority of these grapes come from old vines with a vast mix of typical regional varieties, such as Tinta Pinheira, Tinta Carvalha, Baga, Touriga Nacional, Touriga Fêmea, Tinta Roriz, Alfrocheiro, Jaen, among others. The grapes were hand-harvested, and during the harvest, a first selection was made in the field, with only the grapes that met strict quality criteria being chosen.
Vinification
The grapes were carefully transported in 15 kg boxes. Upon entering the winery, a second sorting was done, and only the perfect bunches were sent by gravity to the old cement tanks (1962), where alcoholic fermentation took place naturally, without the addition of chemicals or yeasts. After fermentation, malolactic fermentation occurred in the same cement tanks. After 22 months, each tank was selected to compose the final blend of Definido Tinto. The ideal glass for serving this wine is a “Burgundy” type glass.
