Vinha Paz
Vinha Paz Colheita demonstrates excellent balance, with fresh red fruit and refined tannins, showing great character and personality. It is a wine with well-integrated structure, expressing intense and persistent notes, promising good aging potential.
In 2002, the first Vinha Paz was born, inspired by the name of António Canto Moniz’s mother, the producer. Vinha Paz is more than just a wine; it is a family legacy over a century old, passed down through generations.
The vineyards, aged between 23 and 40 years, are located on the northern slope of the Dão, six kilometers from Viseu, on granite soils, exposed to the northeast. They are planted at 440 meters altitude on the Quinta da Leira and da Tremoa estates.
Vinification: The grape varieties were vinified separately, allowing for the selection of the best batches. The harvest is manual, with a careful selection of the best grapes, which were transported in perforated 22 kg crates. After total destemming, the grapes fermented in a 4500 kg stainless steel vat for 10 days at a temperature of 26ºC. After the alcoholic fermentation, the wine began a slow malolactic fermentation that lasted 4 months.
Aging: Aged for 12 months in French oak barrels of 225 to 500 liters, ranging from 1 to 10 years old.
