Trufa
The name TRUFA was chosen because there are several analogies between this wine and a truffle:
– both come from the earth, are rare and exclusive;
– both have great quality and a unique flavour;
– both help to enrich and make a meal unique.
It is a wine produced with grapes from old vineyards (over 70 years old) of Quinto do Olival Velho, located on the left bank of the Douro River, between Régua and Pinhão.
The vineyard on schistous terrain, has a blend of approximately 30 different indigenous
indigenous grape varieties, and is located between 300 and 350 m of altitude with
to the North, which gives the wine great freshness.
With an average yield of 250 g /grape, these wines produce exceptional quality grapes;
Vinification:
After careful manual selection on the picking belt, the grapes were destemmed
and trodden by foot in a granite press, then passed to stainless steel vats where
fermented for a period of 8 days.
Aging:
After the malolactic fermentation the wine aged for 20 months in French oak barrels
of French oak, 25% new and the rest used.
