Trufa
TRUFA NEGRA is a wine made from grapes from two plots located in the Douro, in the Cimo Corgo sub-region. The first, located in Valença do Douro, is an old vineyard (over 70 years old) with a mixture of about 30 varieties of autochthonous grapes. It is situated between 300 and 350 metres above sea level and faces north. The second, located at the mouth of the Távora River, is about 30 years old and is a blend of grape varieties where Touriga Franca and Tinta Roriz predominate. It lies between 100 and 150 m above sea level and has an eastern exposure.
Vinification:
After a careful manual selection at harvest, the grapes were destemmed.
The grapes were de-stemmed and crushed in a granite press, then transferred to stainless steel tanks.
Fermented for a period of 8 days.
Aging:
After mololactic fermentation, the wine was aged for 17 months in French oak barrels
10% new and 90% used French oak barrels.
