Sidónio de Sousa
Vineyard Location: This wine comes from a vineyard located in the south of Ancas, in the municipality of Anadia, in the privileged area of Figueira da Costa. Solar exposure: east-west. Soil type: clay and limestone soils. Climate: moderate Mediterranean with mild winters and not very hot summers. It thus has the proper conditions of a transition zone in which Atlantic and Mediterranean influences are mixed. The vineyard produces the grapes in the Integrated Production system. Vinification: Crushing with partial destemming and cooling of the grapes in the winery in small open wineries, where the skin maceration begins and then the fermentation, without addition of enzymes and yeasts. The treading is done manually with wood masses to increase the extraction of the wine characteristics of the grape variety. Stage: After fermentation in small open wineries, the wine is passed to cement tanks and stainless steel tanks, where it rests until January of next year, when it is cleaned and transferred to 4,000 liters barrels of oak, 12 months.
