Sidónio de Sousa
This wine comes from a vineyard located south of the village of Ancas, in the municipality of Anadia, in the privileged area of Figueira da Costa. The solar exposure is east-west, with clay and limestone soils. The climate is moderate Mediterranean, with mild winters and not-too-hot summers, providing the ideal conditions of a transition zone where Atlantic and Mediterranean influences blend. The vineyard follows the Integrated Production system.
Winemaking: The grapes are crushed with partial de-stemming and cooled in the cellar in small open lagares, where the skin maceration begins, followed by fermentation, without the addition of enzymes or yeasts. The foot treading is done manually with wooden masses to enhance the extraction of the varietal characteristics.
Aging: After fermentation in small open lagares, the wine is transferred to cement tanks and stainless-steel vats, where it rests until January of the following year. At that point, it is clarified and racked into 4,000-liter vats made of Portuguese oak, where it ages for 12 months.
