Ribeiro Santo
Region: The Dão Demarcated Region is one of the oldest wine regions in Portugal, dating back to 1908. Located in central Portugal, in a mountainous area ranging from 400 to 700 meters in altitude, it is dominated by the Serra da Estrela, the highest mountain in mainland Portugal. Its name comes from the river that runs through it, the Rio Dão. The characteristics of the wines are strongly influenced by the granitic soil and the fact that the vineyards are situated within forests of pine and eucalyptus.
Vineyards: The vineyard follows traditional planting and was planted in poor granitic soil, with large rocky outcrops, from where the Serra da Estrela can be seen. The entire vineyard operates under an integrated production regime, demonstrating a great concern for environmental issues. The combination of cultural practices associated with the judicious use of environmentally friendly organic products results in balanced productions.
Winemaking: Hand-harvested. Total destemming. Maceration for 24 hours at low temperature before starting alcoholic fermentation in stainless steel tanks. Gentle pump-overs for the extraction of color and aromas. Racked into new French oak barrels of 225L for 9 months, previously used for white wine fermentation.
