Ribeiro Santo
Legend has it that in Oliveira do Conde, there was a place called Barcas, where the boatman crossed the Mondego, allowing the connection between the civitas of Viseu and Bobadela. The route, mentioned by various researchers, would pass through the current territory of the municipality of Carregal do Sal. And here are the stones, some of them shaped like voussoirs, ensuring that this is ancient ground where a Ribeiro Santo flows, once a noble estate and later acquired by a priest.
In this location, in a terroir influenced by the Dão and Mondego rivers, with hot and dry summers and cold winters, on granitic soil with large rocky outcrops, vineyards planted at an altitude of around 400-600 m, E.T. is born—a blend of two native grape varieties from the region.
The Encruzado and Touriga Nacionalgrapes were hand-harvested together, fully destemmed. Extended maceration in stainless steel tanks. Alcoholic fermentation with indigenous yeast at a controlled temperature for 20 days. Foot treading. Decantation into new French oak barrels of 225 L for 12 months.
