Ribeiro Santo
Legend has it that in Oliveira do Conde there was a place called Barcas, where the ferryman crossed the Mondego River, allowing the connection between the civitas of Viseu and Bobadela, a section referred to by several researchers, which would pass through the current territory of Carregal do Sal municipality. And here are the stones, some of them shaped like barrel staves, to ensure that this is ancient ground where a Ribeiro Santo flows, once a noble estate and later acquired by a priest.
It is in this location, in a terroir influenced by the Dão and Mondego rivers, with hot and dry summers and cold winters, on granite soil with large rocky outcrops, vineyards planted at an altitude ranging from 400 to 600 meters, that Ribeiro Santo tinto is born, a blend of native grape varieties from the region.
Winemaking: Manual harvesting. Complete destemming. Fermentation in stainless steel tanks with prolonged maceration and gentle pump-overs for good color and aroma extraction. Natural decantation in stainless steel tanks. 50% of the wine ages in new French oak barrels, and the other 50% ages in second-year barrels for 6 months. Light filtration before bottling.

Perfectly pairs with roasted meat, dishes with nuts, mushrooms, and mild cheeses.
