Reguengos
The grapes coming from the manual harvest of our associates are immediately destemmed and crushed. With the addition of selected yeasts, fermentation begins at a controlled temperature (25oC). During this period, maceration or tanning is carried out through a process of timed pumping over, so as to have a greater extraction of colour and tannins. Tanning lasts about 15 days. The wine ages in deposits for one year. During this period, the wine is submitted to regular tastings, and the best ones are identified and separated. From these, two batches are produced: the best will originate the “Garrafeira dos Sócios” and the second, the “Reserva”. The “Garrafeira dos Sócios” ages for around eight to twelve months, depending on the tasting, in French oak half barrels. After ageing in wood, the wine is bottled and will rest for a few years.
