Quinta Vale D. Maria
A field blend of 41 different grape varieties, including Rufete, Tinta Amarela, Tinta Francisca, Sousão, Touriga Nacional, Touriga Franca, Tinta Roriz, and many others typical of the Douro, from the original 10 hectares of old vines of Quinta Vale D. Maria. The vines are over 60 years old and are exposed to the south, southeast, southwest, east, and west.
Food pairing: Lamb shoulder with smoked eggplant or Shredded beef cheeks with polenta, baby carrots, and pesto.
Vinification: The old vines of Quinta Vale D. Maria are divided into different plots, and each plot is hand-harvested. Grapes are selected before entering the cellar, destemmed, and partially crushed directly into the lagar. In the lagar, the wines are foot-trodden. Manual pump-overs are performed in stainless steel tanks. Wines are racked to clean stainless steel tanks or French oak barrels, 225 liters each, from various cooperages, where malolactic fermentation takes place. All wine lots then age for 21 months in French oak barrels, with these different lots obtained from each fermentation kept completely separate until the composition of the final blend, about one month before bottling. Bottling date: July 2022.
