Quinta dos Roques
Crushing of the grapes with total destemming, followed by fermentation in stainless steel vats with selected yeasts, at a temperature of 28-30oC. The maceration time was from 15 to
19 days, depending on the grape variety, and pumping over was gentle. Ageing in 225 litre French oak barrels for 24 months.
Before bottling the wine was subjected only to a light filtration by cellulose plates in order to preserve all its structure. Bottled in February 2018.
