Quinta dos Roques
Crushing of the grapes with total destemming, followed by fermentation in stainless steel vats, with
selected yeasts, at a temperature of 28-30oC. The maceration time was 14 days and the
pumping over was gentle. Before bottling, the wine underwent a slight cellulose plate filtration to preserve its full structure. Bottled in May 2021 and aged in 225 litre French oak barrels for 6 months.
