Winemaking: Manual grape selection in the vineyard and winery, followed by destemming and crushing. Fermentation in granite lagares with foot treading for a more delicate maceration and controlled temperature, enhancing the aromatic expression of the grape variety and optimizing extraction.
Aging: 12 months in used 500-liter French oak barrels, preserving the grape’s identity with minimal wood influence, focusing on concentration and spicy notes.
