Manual harvesting into 20kg boxes, transported to the the winery for partial destemming of the bunches – some total destemming and others with whole bunches. Pre-fermentative cold maceration, followed by alcoholic fermentation in stainless steel vats with temperature control and malolactic fermentation in stainless steel vats and French oak barrels from different cooperages.
50% of the wine ages in stainless steel vats, and the rest in French oak barrels during 9 to 10 months.
