Yellow d'Oirado in colour, capitoso but dry, is a dense white, textured and seductive, thought and elaborated to accompany very specific dishes to which it can give an exciting gastronomic contribution and whose potential is described in the book, Subtilezas Gastronómicas - recipes around a wine (ed. Assírio & Alvim), written by the producer himself for the harvest of October 7, 2003.
Harvested on the 70th anniversary of producer José Bento dos Santos, this wine is a tribute of the entire team to his mentor, while trying to recreate what was the first harvest of Viognier at Quinta do Monte d’Oiro in 2003.
In 2016, Viognier at Monte d’Oiro was harvested at the beginning of September (different dates depending on the plot). However, some lines were intentionally left that were only harvested more than a month later, on the 13th of October. 1270 kg of grapes with a beautiful d’Oirada colour were harvested by hand which, after gentle crushing with direct pressing, fermented in stainless steel vats with temperature control. Fermentation took place over 18 days and the sugar was fully unfolded. 34 months in used French oak cask (for ageing Port wine).
Only 700 bottles were produced.

Quinta do Monte D'Oiro
Located in the Lisbon region, Quinta do Monte d’Oiro has been a reference since the 17th century in the production of remarkable wines. It was acquired in 1986 by the gastronomic conaisseur José Bento dos Santos, who replanted the best plots – after several years of studies on the soil and climate conditions – with the grape varieties that best adapted to his designs of producing high quality wines, European style (Old World”), which concomitantly were wines of refined gastronomic sense, with a profile eminently tailored to accompany in perfect harmony dishes of a genuine regional cuisine, classical cuisine or haute cuisine. After the first years of consolidation of a consistent high quality wine production, Quinta do Monte d’Oiro entered a new phase in its history from the 2006 harvest, launching a new image and wines from a conversion to organic agriculture. Of the 42 ha of the property, only 15.5 ha were replanted with Syrah, Viognier and Petit Verdot, imported directly from their original regions in France, and with the Portuguese grape varieties Touriga Nacionaland Tinta Roriz.
