Quinta do Carmo
The Quinta do Carmo Reserva is produced only in years of exceptional quality, using the Alicante Bouschet and Aragonês grape varieties.
The vineyards that produce the Quinta do Carmo wine are planted in clay and schist soils, in a terroir that allows for very slow maturation of the grapes, resulting in elegant and concentrated wines. Each grape variety is vinified separately, and the grapes are fermented in stainless steel lagares with automatic foot treading and controlled temperature. After fermentation, a prolonged maceration (7 to 15 days) follows, and the wines are aged in new 225-litre French oak barrels for 18 months, after which the final blend is made.
A fuller-bodied wine pairs well with more complex dishes. It is ideal with Alentejo-style meats, game dishes, or strong cheeses such as Azeitão cheese, Parmesan shavings, or Camembert.
