Weeds are controlled by tilling the soil. Harvest is done manually, variety by variety, when they reach their optimum point of maturation, between the second half of September and the first half of October. The harvest is done in small 10 kg boxes.
These wines are obtained after fermentation at a controlled temperature so as to preserve all the aromatic elegance, in stainless steel vats for 20 days. The wine undergoes malolactic fermentation in stainless steel, where it remains until bottling.

Quinta de Lemos
Quinta de Lemos produces true nectars of the Dão! Our vineyards are tended with care by patient and experienced hands. In homage to the Dão, we create exclusive wines from the region’s native grape varieties. Located 7 km from Viseu, the district capital and a charming city, the estate sits on the Beira Alta plateau at an altitude of 340 meters. In this green paradise in central Portugal, we have a total of 50 hectares – 25 ha of vineyards, 7 ha of olive trees, and the rest divided between pine forest and vegetable garden.
