It is a classic and traditional wine, on the market since 1926, produced only in the best years.
Winemaking: The grapes are hand-harvested, and fermentation takes place in stainless steel vats with gentle maceration of the pomace after partial destemming. The fermentation process is slow, lasting 15 days, followed by an extended aging period, initially in new 250L French oak barrels and then in used 300L barrels. After bottling, it ages in the bottle for 2 to 3 years before being released.
Bottling: After 24 months of aging in French and American oak barrels.
