Quinta das Bágeiras
Pai Abel red wine reveals the character of the region and the people who produce it with each vintage.
The grapes for this wine come from a plot where the two varieties are mixed, aiming to replicate the planting style of a century-old vineyard. With this in mind, and through interventions in the vineyard, production was limited to two or three bunches per vine.
The grapes of the two varieties, harvested simultaneously and without destemming, fermented for about a week in open vats. During this time, wooden plungers were used to carry out punch-downs several times a day until the wine reached the desired intensity.
Finally, the wine completed its fermentation in used Burgundy barrels (French oak), where it aged. It was then transferred to a small wooden cask, where it remained until bottling without any fining or filtration.
