Quinta dos Carvalhais
Quinta dos Carvalhais Colheita is an exceptional red wine from the Dão region, representing the pinnacle of elegance and richness. Inheriting ancient knowledge, Quinta dos Carvalhais combines experience with innovation to create very elegant wines, with flavors of intense delicacy and the unique personality of the region.
Vinification: The grapes were harvested by grape variety and plot, followed by rigorous qualitative selection. After gentle destemming and pressing, the grapes are gravity-fed into small stainless steel tanks with temperature control, where they are vinified, variety by variety. Alcoholic fermentation lasted about 8 days, at an average temperature of around 27ºC.
Maturation: 60% of the wine aged for 8 months in used 225-liter French oak barrels, with the remainder aging in stainless steel tanks. After aging, the wine underwent slight fining and filtration before bottling, without cold stabilization treatment, which may cause sediment formation during bottle aging.
Friends gather, laughter fills the air, stories are revisited. Time stands still in that special place. There’s nothing like perfect company for a memorable meal. And because life’s good things taste even better with a wine to match, surprise your friends and invite Quinta dos Carvalhais Colheita Tinto to join your table.
A very versatile wine that pairs well with both simple and more elaborate dishes. Excellent with meat dishes, game, and various types of creamy cheeses. Try it with beef carpaccio with rosemary and honey vinaigrette.
Open the bottle an hour before serving to allow the wine to breathe and present itself at its best. If the wine has been bottled for more than five years, decanting is recommended.
