Never imagined that by fermenting selected 100% Tempranillo grapes and monitoring their temperature, he would conceive a wine of this quality. The grapes come from the cutting of different plots of the vineyards of Burgos and Valladolid, planted 25 years ago.
Vinification: Manual harvest in 20 kg boxes. Once the grapes arrive at the winery, they are manually selected on our sorting tables, with a double selection, first by bunch, then by grape. Maceration with the grape skins and fermentation for 15 days at 24ºC.
Ageing: 6 months in American oak barrels and 6 months in the bottle.
Pairs very well with tomato-based dishes such as pasta pomodoro, puttanesca, stuffed eggplant, among others, and with salami and cheese.
