Pôpa
The 2021 harvest was long, cool, and rainy from the second half of September. However, this was considered a normal—and dry—year, with productivity higher than the average of the previous decade. It resulted in musts of good quality, fresh, and slightly less alcoholic.
Vinification: Manual harvest in 20-kilogram boxes, with whole clusters received directly in the lagar, without destemming. The clusters were crushed using the traditional foot-treading method. Alcoholic fermentation took place partially in the lagar. After a gentle pressing, alcoholic fermentation finished in stainless steel tanks. Malolactic fermentation occurred in stainless steel tanks.
Aging: 10 months in stainless steel tanks.
