Palpite
The production of this Alentejo regional wine follows the protocols of sustainable agriculture.
Climate
Continental Mediterranean, hot and dry days with very cold nights.
Soils
The vineyards are cultivated on very poor soils of yellow schist (60%) and granite (40%), naturally producing very concentrated grapes.
Viticulture
The grapes are grown either organically or under the Certified Integrated Production regime, without the use of herbicides, and the majority are dry-farmed, without irrigation. Our vineyards are also all certified under the Alentejo sustainability programme.
Age of the vines
Between 20 and 50 years old.
Vinification
Manual night harvest in 20kg boxes. Selection on a sorting table. The grapes are gently crushed and gravity-fed into the vat. Spontaneous alcoholic and malolactic fermentation. “Cuivason for 21 days.
Ageing
18 months in French oak barrels.
