Pago de Carraovejas

Pago de Carraovejas 2021 faithfully reflects the valley from which it takes its name, with vines that form a unique landscape. The tertiary soil of limestone marl, clay, and sandstone forces the vines to self-regulate. The vines are distributed from the mid-zones to the hills exceeding 900 meters in altitude, with plots varying between gentle slopes and steep inclines above 30%, facing south and north.
Balance in an exceptional cycle: The 2021 harvest benefited from a rainy winter, which provided a homogeneous vegetative cycle. Cover crops helped to control the vigor of the vines. Budbreak occurred in late April without climatic incidents, and thinning ensured balanced yields. The harvest was longer than usual due to periods of precipitation, beginning on September 22 and ending on October 14.
Vinification: The grapes for Pago de Carraovejas 2021 were hand-harvested after an initial selection in the vineyard. At the winery, a double selection of clusters and berries was performed. The must was elaborated by gravity to preserve the quality of the raw material. During fermentation, native yeasts and lactic bacteria were used. The wine aged for 12 months in French and American oak barrels, with meticulous attention to detail throughout the process. Finally, it was clarified with natural egg white and bottled in the spring of 2023.
