Pago de Carraovejas
Pago de Carraovejas is the passion for detail in every process; freshness and elegance with the personality of its origin; an extraordinary expression of a unique valley.
Pago de Carraovejas 2022 faithfully reflects the valley from which it takes its name, with vineyards that shape a unique landscape. The tertiary soil, composed of limestone marl, clay, and sandstone, forces the vines to self-regulate. The vineyards extend from mid-level areas to hills rising above 900 meters in altitude, with parcels ranging from gentle slopes to steep inclines exceeding 30%, facing both south and north.
A harvest shaped by climate: The 2022 vintage was characterized by cold winter months and extremely low rainfall, reaching historic lows. However, thanks to the water reserves accumulated from the previous year, the vines maintained a regular phenological cycle and balanced development. Budbreak and flowering occurred perfectly in all grape varieties, ensuring homogeneous and healthy plant growth.
The summer was particularly hot, with several heat waves mitigated by the drip irrigation system. Veraison was slower than in previous years, beginning in early August, followed by uniform berry ripening. Harvesting took place between September 12 and 28.
Vinification: The grapes destined for Pago de Carraovejas 2022 were hand-harvested after an initial selection in the vineyard. At the winery, they underwent a double selection process: first by cluster and then by individual berry. The winemaking process was carried out by gravity, ensuring maximum respect for the raw material.
Fermentation took place with native yeasts and lactic bacteria from the estate. The wine was aged in 225- and 600-liter French and American oak barrels for 12 months. Every step of the process was marked by precision and meticulous care. To ensure better preservation, the wine contains sulfites. Finally, it was clarified with natural egg whites and bottled in the spring of 2024.
