O Produtor, tasting note published in April 23rd 2023

Pacheca Old Wines Reserve reveals good aromatic intensity, very complex with elegant notes of chocolate and black fruits, such as blueberry and blackberry. It is very balanced on the palate with well-integrated tannins and wood, and a long, persistent finish.

Pacheca

This wine is made from grapes from the oldest vineyards of Quinta da Pacheca, planted in the mid-1950s. At that time, the vines were randomly planted in the plots, and the grape varieties were naturally mixed as well. We still try to maintain this tradition in these old vines, as they result in wines with good complexity and aromatic structure.

VINIFICATION

After careful selection for their best condition, the grapes were harvested into 25 kg crates and sent to the wine production center, where they were fully destemmed. Fermentation occurred over 9 days in the traditional 7-ton granite stone tanks with foot treading and gentle pump-overs for cap leaching and extraction of phenolic and aromatic compounds. At the end of alcoholic fermentation, the wine was transferred to second-year French oak barrels, where malolactic fermentation occurred and aged for about 18 months.

BARREL AGING

18 months in new and second-year French oak barrels.
