Niepoort
Telmo Rodrigues is a very well-known Spanish winemaker and producer, with extensive winemaking experience in different Spanish regions. His great interest in the Douro region merged with Niepoort’s desire to explore different winemaking solutions in various terroirs, and from this partnership, Omlet was born. It comes from old vines, over 60 years old, planted at higher altitudes and exposed to the east, which generally have slower and more balanced maturations. The main grape varieties are Touriga Franca and Tinta Roriz, but there is also some Sousão and Alicante Bouschet. The idea was to let Telmo’s vision for low-extraction winemaking shine through, aiming to produce a wine without harsh edges.
VINIFICATION: The fermentation was carried out in a wooden lagares with full destemming, with a maceration period of 25 days, without extraction. The wine aged for 18 months in French oak barrels (228L) and used barrels (2000L).
FOOD PAIRING SUGGESTION: Maronesa beef, meat chunk, wild boar.
