Niepoort
This is the 3rd edition of OmLet, which combines Telmo Rodrigues’ interest in producing a wine in Portugal, particularly in the Douro Valley, with Niepoort’s ongoing desire to experiment with different approaches in various terroirs. The idea was to incorporate Telmo’s technique of performing gentle vinifications. To do so, grapes from two old vineyards over 70 years old, planted in the Covas Valley, at high altitude, with an east-facing exposure, were used.
Telmo Rodrigues is a well-known Spanish winemaker and producer, with vast winemaking experience in different Spanish regions.
VINIFICATION: The year 2008 was excellent in the Douro region. The rains that occurred during the spring and early summer allowed for the maintenance of soil moisture levels until harvest time. On the other hand, the low yields, resulting from poor birth and a difficult flowering with high humidity levels, resulted in very balanced musts, with good acidity and non-excessive sugar levels. During the maturation period, the cold nights led to wines with a fresh and very present aromatic profile. The harvest took place in the last week of September. The grapes were fully destemmed and fermented in wooden tanks, with a maceration of about 30 days and minimal extraction. The wine aged for 18 months in used 500 and 300L barrels, aiming to maintain the purity of the fruit and avoid an overly pronounced wood presence. Bottled in: July 2010.
FOOD PAIRING SUGGESTIONS: Maronesa beef, steak, wild boar.
