Careful hand sorting, gentle thinning, then
transferred to small, open-surface tanks. Very long first
pump-over (4 hours). Fermentation started with
native yeast and controlled temperature. Very gentle
pumps 3 times a day. Vertical Soft
pressing. Malolactic fermentation and ageing done in
stainless steel.
Aged for 12 months in stainless steel.
