Grapes harvested manually and stored in cold storage until vinification. VINIFICATION
– Zoning of specific areas of each grape variety that expressed in the
varietal aromatic intensity.
– Pre-fermentative cold maceration at low temperatures for 2 days and
individual fermentation of the grape varieties in small volume vats.
– 20% of the blend is aged in French oak barrels.
