Color: Deep Red.
Nose: Red fruits, with notes of undergrowth, vegetal and balsamic, nuances of wood and spices.
Palate: Complex with notes of pencil shavings and balsamic in a firm and very elegant structure.
In a mild, temperate climate influenced by the proximity of the Atlantic Ocean, this Monte Cascas Vinha do Quinto is born from vines over 96 years old, planted in limestone soil.
The harvest took place in September, and it was carried out manually.
Vinification and aging: The grapes are partially destemmed (30%) and crushed directly into a lagar. Three days of cold maceration; 12 days of alcoholic fermentation with temperature control; gentle foot treading twice a day; malolactic fermentation in new French oak barrels. Aging for 24 months in French oak barrels.
Pairs well with Iberian ham, soft cheese (Serra da Estrela), game stew, and Bairrada-style suckling pig.
