Monte Cascas
The red wine Monte Cascas Ramisco is born in Colares, with an unquestionable Atlantic influence, cool and humid summers, morning mists, cold and salty winds, on sandy soils; the vines extend their cords horizontally in the sand; the cords and new shoots are lifted from the sand 6 to 8 weeks before the harvest by canes about 25 cm long, called “pontons.”
The harvest took place in September and was done manually.
Vinification and aging: The grapes are partially destemmed (30%) and crushed directly into a lagar. Three days of cold maceration; 12 days of alcoholic fermentation with temperature control; gentle foot treading twice a day; 22 days of “cuvaison”; malolactic fermentation in new French oak barrels. Aging for 18 months in French oak barrels.
An excellent wine to enjoy on its own or paired with filet mignon and mushrooms.
