In the tasting it shows intense floral aromas of rosemary and rock-rose, well integrated with a fragrant aroma of black plums and pepper. Structurally intense and with a well marked depth, it becomes a very pleasant and persistent wine.
Petite Sirah grapes harvested at dawn and carefully transported to the winery, where they were partially destemmed. Afterwards, and for 48 hours, a pre-fermentative maceration took place at low temperatures in a reductive environment. The fermentative cycle took place normally, at a controlled temperature in 20 ton vats. After the end of the alcoholic fermentation, a post-fermentative maceration was carried out at low temperature for 96 hours. Malolactic fermentation took place naturally in wood, where the wine aged for a period of 8 months and was subsequently bottled.
