The wine has a defined ruby colour, a complex aroma of ripe fruit (blackberries, currants), and some notes of coconut and chocolate. In the mouth it is soft, round, with soft tannins and a long finish. It accompanies grilled or roasted meat dishes, game, pâtés and matured cheeses.

Monsaraz

The grapes from the manual harvest of our associates are unloaded and immediately destemmed and crushed. With the addition of selected yeasts the fermentation begins at controlled temperature (28ºC). During this period the maceration or tanning is done, by the process of timed reassembly. The tanning lasts the whole fermentation period, about 8 days. After the fermentation the wines are submitted to regular tastings, the best being duly identified, separated and stabilized. This results in two lots, one of which will be aged in French oak, in order to be blended with the other, which has been aged in deposit. After mixing these two blends, the final wine to be bottled is obtained.

CARMIM

An interplay of senses which is gaining ground in the Alentejo. It encompasses traditions as old as the city walls which protect Monsaraz. In the middle of the blue and white houses there emerges the Torre de Menagem (castle keep). From its summit the locals always viewed the plains as their greatest wealth. It is the latter which give rise to the vineyards which surround the medieval town and which lend it fame. And it is because of the wine that an increasing number of people are fascinated by the region and set out to discover it. From this land of Kings there emerge every year nectars worthy of emperors.

CARMIM has 7 brands all of which are well-known by the general public particularly Terras D’El Rei, Reguengos DOC and Monsaraz DOC.

Moreover, the Monsaraz red wine is now included on board TAP planes and at the VIP lounges at national airports. The upshot of a partnership between the national air company and the Cooperative, the Monsaraz red brand can be found on all TAP routes in its tourist class. On the ground or in the air, Monsaraz wine is another calling card of the national air carrier, taking the flavours and aromas of the Alentejo to thousands of TAP passengers.

Besides Monsaraz, all these brands are already an assurance of meetings which can occur anywhere in the world. What matters is that there should always be a CARMIM bottle on the table.

At the end of the day, rather than just producing wines, the company has taken Alentejan culture worldwide, promoting meetings and bringing people together who would otherwise not have known each other.
