Herdade do Rocim
With two thousand years of tradition in Alentejo, clay amphora wine continues to be produced according to the winemaking processes of Roman villae. With this wine, Herdade do Rocim pays homage to the ancestral tradition of vine and wine culture.
Climate: Typically Mediterranean, in the viticultural sub-region of Vidigueira where climatic conditions are the mildest in Alentejo, providing an optimal microclimate for the production of high-quality wines. Soils: Low-yielding, of schist origin. Great pedological potential for vine cultivation and obtaining excellent wines.
Vinification and aging: Vinification took place through the traditional process, in clay amphorae, without temperature control. The ancestral way of making clay amphora wine was fully respected. Fermentation with indigenous yeasts from the region and without any addition or correction of musts. The wine aged for three months in bottles.
This wine was not stabilized before bottling, so as not to affect its aging potential, and may develop slight natural sediment during its time in the bottle.
